Noma in Copenhagen was voted worlds best restaurant several times and is considered a pioneer in fermentation, which became a trend meanwhile. The book was designed by Atelier Dyakova, London. Paula did all the illustrations in the book including 9 chapter illustrations and the cover illustration. Her drawings show what photographs can't tell. The book bears her signature and establishes an own visual world for fermentation.
